Lunch!

You can see the tiny chickweed flowers in the salad.
Lately I've been spending a lot of time looking at the ground.  I find that there are more edible weeds around than I knew!  The other day I discovered I had chickweed growing in the front of the house and that it does, indeed, taste like corn.  Works for me!

Today I made a quick salad with chickweed, bittercress, some carrots and violets for garnish.  Served with a side of Robiola Due Latti cheese, it makes a refreshing lunch.

  1. You know, we have a ton and I mean like half the lawn, plus the garden paths are over run with chickweed but I haven't dared to try it yet. You saying that it tastes like corn makes me want to though. Maybe in my next salad I will add a little bit. I take it that it is still good even if it has flowered and you can use stems and all?

  2. My books say to just use the very tips - the top 1-2 inches - but within that top 1-2" everything is fair game, flowers, buds, leaves and stems. Make sure you don't have a lookalike like scarlet pimpernel or spurge which are toxic....!
